Spelt, also known as dinkel wheat or hulled wheat, is a species of wheat that has been cultivated since approximately 5000 BC. Spelt is also more water-soluble than wheat, which makes it easier for the body to digest. Spelt gluten has a very soft feel and gives a very light eating loaf.
Wessex Mill is a small family flour mill based in Wantage, Oxfordshire. The flour is milled using local wheat that is collected from farms surrounding the mill. We ensure we only select the best wheat with high quality gluten by testing samples before we bring any into the mill. Being a small mill means we can store the wheats from each farm separately without batching.
