Winter squash have distinctive ridges and sweet yellow/orange flesh. Varieties vary in colour from orange, yellow and green. It is a great source of dietary fibre and potassium and also contains beta-carotene, vitamins C and B, magnesium and manganese.
The squash seeds are often turned into snacks, similar to pumpkin seeds simply lightly roast them. Acorn squash are wonderfully easy to prepare - just cut them in half, scoop out the seeds, add a little brown sugar and/or maple syrup, and bake for a little over an hour.
